How to make SAMBHAR \ Secret recipe from Fast Food restaurant SWADESH

Preparation Time:- 45 mins
Servings:- for 3


INGREDIENTS:
For sambhar paste
Cooking oil 2 tbsp
Hing 2 pcs
Mustard seeds/rai 1 tbsp
Urad dal 1 tbsp
Chana dal 1 tbsp
Black pepper/kali Mirchi 1 tbsp 
Peanuts/Moongphalee 2 tbsp
Fenugreek seeds/methi seeds 1 tbsp
Coriander seeds/akkha dhanya 3 tbsp
Curry leaves/kadi Patta 2 tbsp
Dry Red Chilli/Sukhi Lal Mirchi 50 gm
Turmeric powder/Haldi powder 1 tbsp
Grated coconut/ Khopra powder 1 tbsp


For sambhar:
Cooking oil 2 tbsp
Mustard seeds/rai 1 tbsp
Urad dal 1 tbsp
Cumin seeds/jeera 1 tbsp
Garlic paste 1 ½ tbsp
Curry leaves/ Kadi Patta 2 tbsp
Onion (chopped) 1 cup
Tomato 1 cup
Turmeric powder/Haldi powder 1 tsp
Red chilli powder 1 tsp
Salt as per taste 
Water 750 ml
Add vegetables diced (pumpkin/bhopla/kaddu, drumstick, cucumber/kheera) 250 gm
Jaggery 100 gm
Coriander leaves (chopped) ½ cup



METHOD:
For masala 
Turn on flame and heat wok
Add oil
Let it heat on high flame
Add Hing| Asafoedita
Roast it till light golden
Add mustard seeds, urad dal, Chana dal, black pepper, peanuts, fenugreek seeds
Roast till it turns light golden brown
Add coriander seeds
Mix well
Add curry leaves, dry red chilli
Saute it
Add turmeric powder, grated coconut
Fry for few mins
Let it cool
Grind this mixture with little water
Set aside.


For sambhar:
Turn on flame and heat cooking pot 
Add oil 
Let it heat on high flame 
Add mustard seeds, urad dal, cumin seeds, garlic paste
Roast it
Add curry leaves
Fry till it turns light golden brown 
Add chopped onion
Fry till it becomes soft
Add tomatoes 
Mix well 
Add turmeric powder, red chilli powder, salt
Mix it
Add water, vegetables diced (pumpkin, drumstick, cucumber)
Let it boil
Add jaggery, sambhar masala, chopped coriander 
Mix well 
Let it cook on slow/low flame for 30 mins
Serve hot.
