How to make Veg Dum Biryani

Servings:- 2


INGREDIENTS:
For Rice 
Basmati rice 300 gm (soaked in water for 30 mins) 
Bay leaf/tej patta 1
Cinnamon stick/dalchini 2 small
Star anise/chakr phool 1
Green cardamom/hair elaichi 2
Cloves/laung 2
Salt as per taste 


For biryani masala:
Ghee 2 tbsp
Cinnamon stick/dalchini 2 pcs small
Green cardamom/hair elaichi 4
Cloves/laung 3
Cumin seeds/jeera 1 tsp
Onion (sliced) 2 medium 
Butter 1 tbsp
Tomato 1 ½ (julienne)
Salt as per taste 
Turmeric powder/Haldi ½ tsp
Red chilli powder 1 ½ tsp
Coriander powder/dhanya powder 1 tsp
Dry mango powder/amchur powder ½ tsp
Dry fenugreek leaves/Kasuri methi few
Water ¼ cup
Curd/Dahi 2 ½ tsp
Boiled vegetables chopped (french beans 30 gm, cauliflower 20 gm, carrot 15 gm)
Boil vegetables with a pinch of turmeric
Coriander leaves (chopped) few


METHOD:For Rice
Turn on flame and heat cooking pot 
Add water 
Let it boil
Add whole spices (bay leaf, cinnamon stick, star anise,  green cardamom, cloves)
Add salt
Add basmati rice
Boil the rice for 10-15 mins on low flame
Once done 
Strain the water 
Set aside 


For biryani masala:
Turn on flame and heat cooking pot
Add ghee 
Let it heat on high flame 
Add whole spices (cinnamon stick, green cardamom, cloves, cumin seeds)
Roast it 
Add onion 
Fry till it becomes soft
Add butter
Mix it
Add julienne tomato
Cook till tomatoes tender
Add masala (salt, turmeric powder, red chilli powder, coriander powder, dry mango powder)
Add Kasuri methi
Mix it
Switch off the flame. 
Add water
Mix well 
Till oil comes on top
Add curd 
Roast it on low flame 
Add boiled vegetables (french beans, cauliflower, carrot)
Mix it
Add little water 
Cook till all the ingredients get well combined
Lastly, add coriander leaves 


For dum 
In a cooking pot place biryani masala
Spread half-cooked rice 
Sprinkle coriander and mint leaves
Cover with silver foil
Give dum on low flame for 2-3  mins
Open and check it 
Once done 
Serve hot.
