How to make Biryani | Chicken Dum Biryani Live from Restaurants Kitchen

Preparation Time:-2 hr 30 mins

Servings:- 5-6 


INGREDIENTS:

For marination

Chicken 1 kg

Red chilli powder 2 tsp

Cumin powder/jeera powder 11/2 tsp

Garam masala 2 tsp

Salt as per taste 

Cinnamon stick 2 small

Green cardamom/hari elaichi 4

Big cardamom/badi elaichi 1

Bay leaf/tej patta 1

Green chilli 6-7

Ginger garlic paste 2 tsp

Mint leaves (chopped) ½ cup

Ginger julienne (sliced) 50 gm

Curd/dahi 8 tbsp

Fried onion/barista 1 tbsp

Ghee 3 tbsp


For Rice:

Water 2 ltr

Green cardamom/hair elaichi 4-5

Black cardamom/badi ealichi 1

Cinnamon stick 2 small

Bay leaf/tej patta 1

Salt as per taste/4 tsp

Rice (basmati) soaked in water for 20 mins 1 kg

Cooking oil ½ cup


For layering:

Marinated chicken 

¾ cooked rice 

Saffron water 7-8 tbsp

Ghee 3 tbsp

Fried onion (sprinkle)

Ginger julienne 

Green chilli

Coriander leaves 

Mint leaves 

Kewra water


METHOD:

For marination 

In a bowl,

Add chicken, add in red chilli powder, cumin powder, garam masala,  cinnamon stick, green & black cardamom, bay leaf

Mix  well

Add green chilli, ginger-garlic paste, chopped mint leaves, ginger julienne, curd

Mix it well

Add fried onion 

Mix well 

Add ghee 

Slightly mix

Marinate for 30 mins in the fridge 


Method for Rice:

Turn on flame and heat cooking pot 

Add water, green cardamom, black cardamom, cinnamon stick, bay leaf, salt as per taste 

Mix it

Add soaked rice, salt

Slightly mix

Boil till 1/3 (approx 5-7 mins)

Cook till ¾ 

Drain the water 

Keep aside


For Layering

In a marinated chicken,

Spread rice, pour saffron water, ghee, sprinkle fried onions

Again pour rice, saffron water, ginger julienne, green chilli, fried onion, chopped mint & coriander leaves, kewra water, ghee


Cover the sides with dough & cover with a lid 

Turn on flame 

Add biryani on flame for 2-3 mins on medium flame 

After 2-3 put biryani on Tawa

Give dum for 20-25 mins

Open and check it 

Once done 

Serve hot.

Spread the rice evenly on the marinated chicken masala.
