Preparation Time:- 2 hrs 30 mins

Servings:- 5 


INGREDIENTS:

For chicken marination 

Chicken 1 kg

Salt as per taste 

Fried onion/Barista ¼ kg  (3-4 onions) (half we have to use in marination and half for layering)

Curd/Dahi 250 gm

Garam masala 1 tbsp

Ginger garlic paste 1 tbsp

Green chilli paste 3 tbsp 

(15-20 green chillies  )

Coriander leaves hand full

Mint leaves hand full 

Lemon juice ½ 

Cooking oil 1 cup

Cream/malai 1 tbsp

Cashew paste/Kaju paste (5 cashew grind in milk)

Mawa 100 gm

 

For preparing rice:

Water 2 ltr

Rice (basmati) 1 kg (washed and soaked)

Cinnamon stick/Dalchini 4

Cloves (laung) 4

Green cardamom / Hari elaichi 4

Cumin seeds/jeera 1 tbsp

Salt as per taste/3 tsp

Coriander leaves hand full 

Mint leaves hand full

Green chilli 10 (if you want more spicy then slit green chilli and add)

Cooking oil 1 tbsp


For layering:

Fried onion/Barista

Coriander leaves 

Mint leaves 

Ghee 3 tbsp

Milk 1 cup

Garam masala sprinkle

METHOD:

For marination 

In a bowl,

Add chicken, salt, fried onion, curd, garam masala 

Add ginger-garlic paste, green chilli paste, coriander and mint leaves 

Mix and marinate well

Add cooking oil (use that oil also in which you have fried onions)

Add lemon juice

Give a nice mix 

Add cream/malai, cashew paste, mawa

Slightly mix more

Marinate for at least 1 hr.


For Rice:

Turn on flame and heat cooking pot 

Add water, green cardamom, cloves, cinnamon stick, cumin seeds, salt

Add green chilli, coriander and mint leaves

Add oil (in which you have fried onions)

Stir it, cover it for 3-4 mins and let it boil

Add rice (washed and soaked)

You need to cook till up to 70% and the remaining will cook while giving dum

Once the rice is 70% done strain it

Keep aside.


For layering:

Turn on flame and heat on slow flame

In cooking pot

Take 1 tbsp marination oil and grease it

So that marinated chicken doesn't burn.

Now spread slice potatoes/ soaked rice as the base.

Add marinated chicken 

Spread 70% cooked rice

Add remaining fried onions, coriander and mint leaves 

Do the 3 holes in biryani with a spoon

Add the ghee, milk, sprinkle garam masala 

Cover it with foil/cloth/and give dum

Cook on fast flame for 4-5 mins and then cook on a slow flame for 13-14 mins

Do not open before 20 minutes

Remove in a serving dish

Garnish with cashews 

Serve with any raita 

Serve hot.

(Additional information: if you are making mutton biryani, then add raw papaya paste to make mutton tender)
