Preparation Time:- 2 hrs 30 mins
Servings:- 2-3


INGREDIENTS:
For Mutton Marination
Mutton 600gm 
Lemon juice ¼ cup (approx 2-3 lemon)
Ginger garlic paste 3 tsp
Garam masala 3 tsp
Salt as per taste
Olive oil ½ cup (You may use any oil)


For Rice Preparation:
Oil 1 cup 
Bay leaf (tej patta) 2
Cinnamon (dal chini) 2-3
Cumin seeds (jeera) ½ tsp
Black pepper (kali mirch) ½ tsp 
Mace (javitri) 2
Green cardamom (elaichi) 4-5
Cloves (laung) 4-5
Onion (sliced) 2
Water 500 ml
Green chillies 3
Salt as per taste
Sugar ½ tsp
Garam masala 1 tsp
Rice (Basmati soaked) 300 gm
Coriander leaves (kotmir) few
Mint leaves (pudina) few


For sauce:
Tomato 4
Green chillies (hari mirch) 4-5
Mint leaves (pudina) few
Coriander leaves (kotmir) few
Salt to taste
Lemon juice 5 tsp


For servings:
Cucumber
Beetroot 
Tomato 
Fried cashew
Fried onions (Barista)
Coriander and mint leaves


METHOD:
For Mutton Marination
In mutton, add lemon juice, ginger-garlic paste, garam masala, salt, olive oil (you may use any oil).
Mix and marinate for approx 15-20 mins in the fridge.


For Rice:
Turn on the flame and heat a pot
Add oil 
Let it heat on high flame
Add bay leaf, cinnamon stick, cloves, black pepper, mace, green cardamom, cumin seeds, fry for a min.
Add onions
Fry on slow flame till it becomes golden brown.
Add water, green chillies, stir it.
Add salt, sugar, garam masala (you can use homemade or any brand of garam masala)
Stir it, let it boil
Add rice (wash, and soaked it for 20 mins)
Add coriander leaves, mint leaves, stir it
Close the lid and cook it for 10-15 min on low flame.
Turn off the flame (do not open the lid before 10-15 mins)
Open and check it, keep aside.


For Cooking Mutton:
Turn on the flame and heat a pressure cooker
Add marinated mutton
Cook it for 6 whistles on high flame
Remove in a tray and put it in an oven or shallow fry in a pan.
Keep aside.


For Arabic Sauce:
In a blender, add tomatoes, green chillies, coriander leaves, mint leaves, salt, lemon juice.
Blend it and remove in a small serving bowl.



For serving:
In a serving plate, assemble tomatoes, cucumber, beetroot 
Add rice, spread saffron water, topped with fried cashew, fried onions
Add  coriander leaves, mint leaves
Add mutton pieces 


Lastly, serve it with Arabic sauce


Serve hot.
