How to make Schezwan Sauce | Schezwan Sauce Restaurant's Secret Recipe

Preparation Time:- 30 mins approx
Servings:- for 4


INGREDIENTS:
Cooking oil 150 gm (you can use any oil)
Garlic (chopped) 150 gm
Celery (chopped) 50 gm (optional)
Ginger (chopped) 100 gm
Green chilli (chopped) 75 gm (you can add according to your spicy taste)
Hot and sweet sauce 3 tbsp
Red chilli paste 3 tbsp (150 gm dry Kashmiri red chilli boiled without seeds and then grind)
Red chilli sauce 3 tbsp
Tomato ketchup 4 tbsp
Salt as per taste 
Aromat powder/Maggi seasoning 2 tsp
White pepper 1 tsp
Sugar 1 tsp
Dry red chilli 3 pcs
Star anise 1 pcs


METHOD:
Turn on the flame and heat wok
Add oil
Let it heat on high flame 
Add dry red chilli and star anise 
Add chopped garlic
Fry till light golden brown on slow flame
Add chopped ginger 
Roast it
Add celery 
Roast it
Add chopped green chilli (you can add according to your spicy taste)
Roast it on a slow flame for few mins till oil comes on top or for 5 min
Add red chilli paste mix it
Add sauces (hot and sweet sauce, tomato ketchup, red chilli sauce)
Roast and mix well on a slow flame for 5-10 mins till oil comes on top and stir continuously 
Add seasoning (salt, aromat powder/Maggi seasoning, white pepper, sugar)
Again roast and mix on a slow flame for 5-10 mins and stir continuously 
Add 3 tsp more hot and sweet sauce 
Mix well
Remove and store in an airtight container in the fridge.


(Additional information: cook this sauce on a slow flame, the more you cook this sauce, the more chances of preserving 
If your oil and sauce is separate that means your sauce is ready)
